Victoria Distilleries launches new gin that changes colour with mix

Victoria Distilleries in Sidney have released a new gin that changes colour. (Victoria Distilleries)

The latest creation by Sidney’s Victoria Distilleries — Empress 1908 Gin — is being described by the local spirits manufacturer as “transformative.”

In fact, their new gin starts as an indigo blue — and then changes colour when either citrus or tonic are added. According to the distillery, the gin is infused with butterfly pea blossom which adds a distinct blue hue. Adding the mix changes the colour to a rose petal pink.

“We are thrilled to be launching Empress 1908 gin in Canada,” stated Victoria Distilleries’ President Peter Hunt in a media release. “Our team is extremely excited for everyone to taste our gin and become not only enthralled by the colour change, but also with the clean and polished flavours of the botanicals.”

The gin was launched May 12 at the Fairmont Empress Hotel in downtown Victoria, to coincide with the unveiling of Empress Cake - and in conjunction with the re-opening of the hotel after extensive renovations.
